Abstract |

- LC-ESI-Qq-TOF-MS analysis in combination with PCA was applied to differentiate green, Darjeeling and black tea samples
- SmartFormula3D (combining exact mass and isotopic pattern information in MS and MS/MS
- spectra) allowed for sum formula generation of relevant compounds differentiating samples
- Removing caffeine for PCA calculation revealed a separation of the samples according to oxidation grade obtained during tea processing
- Compounds with higher abundance in black tea could be shown to belong to the class of flavonoids
- Green tea samples contained higher amounts of catechins compared to black teas
